The housekeeping manager is responsible for the recruitment and training of his/her team, such as valets, laundry crew, public areas cleaners. He/She is in direct contact with customers and suppliers in the course of his/her activities. He/she organizes the communication flows related to the service, ensures recruitment, animation and training of the floor staff and determines the budgets required by the department. The head sommelier is in charge of the restaurant’s cellar: he selects the wines according to the restaurant concept, deals them from the winemakers, he develops a varied and original menu to accompany the kitchen of the establishment; he is also in charge of liqueurs and spirits, mineral waters, aperitifs, coffees, infusions and sometimes cigars (when the restaurant has a smoking area).
